Strawberry and “Any Fruit” Cobbler
1 ½ qts
hulled CSA strawberries
a combination of 2 or 3 other fruits—any combination of tart
and sweet fruit works. I’ve used these combinations added
to the strawberries:
• 2 stalks CSA rhubarb and 3 fresh peaches;
• 3 fresh peaches, 1 package frozen raspberries, pineapple chunks;
•
some rhubarb, 1 ½ cups blueberries, 5 fresh apricots
½ cup brown sugar or sweetener of your choice
1 tsp cinnamon
¼ tsp nutmeg
2 cups Bisquick
½ cup milk
1 Tbs sugar
Heat oven to 350. Mix fruit, sugar, cinnamon and nutmeg in a pot.
Heat on stovetop to boiling, cook for 10 minutes. Put fruit mixture
into
a 3 qt baking pan. Mix Bisquick and milk until a soft dough forms.
Drop 9 spoonfuls of baking mix on top of the hot fruit. Sprinkle
with the sugar. Put in oven, cook 20-25 minutes until the dough
is brown
and fruit is bubbly. Let it cool for about 30 minutes. Serve
with vanilla ice cream.
